Resort Chefs of the Hamptons: The Drivers Seat

The Drivers Seat
Southampton, NY


Shrimp Scampi ( 1 portion) 6 Shrimp 13/15
6 Shrimp 13/15 size cleaned and deveined, tail on
1 oz. garlic butter
½ oz. lemon juice
1 oz .cooking sherry wine
1/8 oz. parsley
1 oz. bread crumbs, favored with parm chicken
Garlic crouton
Baked Potato
6 oz. veg

Casserole Dish 8 oz., Spatula, Tablespoon, flat mini china cap

Place Shrimp tail up in casserole dish add 1 oz. garlic butter. !/2 oz. lemon juice, 1 oz. cooking sherry wine and flavored bread crumbs. Place in oven 500 deg. Fro 7 minutes and garlic crouton, cook for 1 more minute. Put Baked potato on plate and 8 oz. veg in hot water drain and place on plate.


Stuffed Flounder:
Ingredients
3 Table spoons Olive Oil
1 small carrot (grated)
¼ Large White Onion
4 Celery Stalks (diced)
1 Teaspoon Fresh crushed Garlic
1 Tbl Spoon Chopped Parsley
½ Teaspoon Shrimp Base
8 oz Cream Cheese
8 oz Grated Parmesan Cheese
8 oz. Swiss Cheese (chopped)
3 Tablespoons Cooking Sherry
½ Pound Bay Scallops
½ Pound Crab meat
5 Cups Japaneese Bread Crumbs (Panko)
8 Flounder Filets
8 oz Garlic Butter
8 oz White Wine
2 oz Lemon Juice


Instructions:
Heat olive oil in an 11 inch frying pan. Place garlic, onions, parsley and celery in pan and cook until crispy about 3 minutes. Add 3 tbsp of cooking sherry. Add scallops and crab meat and cream cheese. Cook everything together for about 8 minutes. Add the Japanese bread crumbs to consistency (should be firm and not runny). Let cool for 5-10 minutes then roll one handful in each filet. Then place filets in a 6 ½-8 inch ceramic casserole dish and add 2 tbsp of garlic butter, 2 oz of cooking sherry and 1 tbsp of lemon juice and 1 tbsp of bread crumbs on each filet. Bake for 12 minutes at 380 degrees.
