Resort Chefs of the Hamptons: Brewster's Stuffed Flounder & Lobster Bisque

Hampton Bays, NY Stuffed Flounder Heat Stuffed Flounder in the oven at 350-400 on a cookie sheet for 17 minutes Set the heated stuffed flounder on a bed of prepared white rice Pour the Lobster Bisque (see additional recipe) over the top Serve with an ear of corn 2 - 1 ½ Lobster bakes Boil water, add lobsters Steam for 13 minutes At 13 minutes add the Shellfish bags and steam with lobster for an additional 7 minutes. Serve with butter and an ear of corn Lobster Bisque Create stock: Boil lobster shells, sun dried tomatoes, celery, onions, Cajun seasoning, garlic, thyme, chopped garlic and cooking sherry. Allow to boil 20 minutes. Remove and strain out all shells etc. In Kettle: Melt 2lbs butter, add flour until a cookie dough like mixture is created Add sun dried tomatoes, celery, onion, cooking sherry, garlic, thyme, pepper celery salt, Cajun seasoning. Slowly add 2 quarts half and half, followed by 1 gallon milk, add the stock previously made, and finally add 16 oz of tomato paste and 2lbs of cooked lobster meat. |
