Louisiana Oysters: A History and Celebration of the Louisiana Oyster Industry

When you think of New Orleans, you probably think of great music, creole cooking, the Saints, and the French Quarter...and while all of those things go together to make the magic gumbo that is New Orleans, it's more likely that the humble oyster is more responsible for putting New Orleans on the map than anything else.

More than 1/3 of the nation's oysters come from Louisiana...so, it's no great surprise our oysters are showing up in great oyster recipes from coast to coast.
