Schooners, The Last Local Beach Club, will host the Annual Lobster Festival & Tournament again this year: the biggest 3 - Day Lobster Festival in Florida. With huge Local Lobsters on the weigh-in scales, fresh lobster prepared every mouth-watering way you can imagine, live entertainment by the Latitude 29 and the Annual Schooners Sand Sculpting Contest, it is a HUGE event that draws thousands of divers and lobster fans from all over the Southeast.


Lobster Tournament divers will be competing in a variety of catagories including Spiny Lobster, Shovelnose Lobster and Big 6. It will be held September 16-18, 2005. (Learn more about Schooner's Lobsterfest)

So how does Florida lobster compare to cold water lobster? I've always wondered...

I cannot say that I have ever had a lobster. Although, I had imitation crab once.

By the way, in answer to your question, trishben, about Maine Lobster vs Florida Lobster - Maine Lobster is really tender and meaty with big claws full of meat. Florida "Spiny" lobster and "Shovel nosed" lobster do not have the big claw meat and they are not quite as tender, but they are full of flavor and DELICIOUS - plus, a little trick I learned from Doug Shook at Louie's Backyard in Key West ... if you wrap the Florida Lobster meat tightly in saran wrap and boil it for 6 minutes in rapidly boiling water, it will tenderize it - then, you can grill it, fry it, broil it, pan fry it - or whatever, as you would normally do. It works! Try it!

A favorite lobster recipe of mine is lobster salad sandwich, similar to Crab Louie which uses boiled lobster meat. Since 6 minutes is enough time to cook the meat through and I usually boil whole lobsters with a crab boil, I'm wondering if I reversed it, boiled whole for about 2 minutes or so first in the seasoning, then tried Doug's trick would that work?
