A local group has put together an organization that promotes redfish .... both sport fishing and on the menu!
Redfish Riviera encompasses coastal fishing from Texas to South Carolina.
I have several friends who fish in local redfish tournaments and love it.
And probably my favorite dish in the world is Redfish on the Halfshell at Bourbon House in New Orleans (don't forget to add the crab meat!)
